Kumara Breakfast Boats
Durning the weekends, Trent & I have a bit more time in the mornings so we have like to get creative over breakfast time. Kumara (or sweet potato) is something we both love so thought it would make a great base for our breakfast boats. Despite looking fancy these take minutes to prep and then you throw them in the oven, they create minimal mess and most importantly taste delicious. Like most of my recipes you can switch up the ingredients depending on your taste buds, i.e. swap spinach and red onion for bacon and cheese for a more hearty version.
- 2 large kumara
- 4 eggs
- handful spinach, roughly chopped
- 1/2 red onion, diced
- 1/2 tomato, diced
- Italian parsley to serve
- salt and pepper, for seasoning
Pre heat the oven to 200*C. Use a fork to poke holes all over the kumara and then microwave for 7 minutes until soft. Slice the kumara in half and scoop out the middle of the kumara ensuring you leave a good sized boarder to keep everything held in place,
Fill each kumara with your fillings and then crack an egg on top, sprinkle with Italian parsley and season with salt and pepper. Place onto a lined baking tray and bake for 15-20 minutes depending on how you like your eggs.
Once cooked, plate up and sprinkle with more fresh Italian parsley and enjoy hot!
