Healthy Baked Broccoli Balls
Finding fun and exciting new snacks can be a massive challenge for me, but these broccoli balls are amazing! These would make a perfect afternoon snack or pre dinner nibble for those a little more health conscious and would also be great for kiddies dinner ideas.
- 2 cups broccoli
- 1 egg
- 1/3 cup cheddar cheese (grated)
- 2/3 cup panko crumbs
- 1/4 cup onion (diced small)
- 2 tablespoons parsley
- salt and pepper to taste
- tomato relish to serve
Pre heat the oven to 200*C fan bake, and bring a jug of water to the boil. Cut the broccoli heads into florets and place in a large bowl, once the water has boiled cover then broccoli for one minute then drain well.
Blitz the broccoli in a food processor or blender for a few quick pulses to chop finely but not pureed. Place back into the large bowl along with all the other ingredients and mix throughly. Roll into small balls and place onto a lined oven tray.
Cook for 20 minutes, ensuring flipping once at around the 10 minute mark (I totally forgot to do this!) Remove from the oven and enjoy with a fresh tomato relish, I am using one that my grandmother made me.
